Fanta Chicken: A Slimming World Recipe

Fanta…. Chicken? (Most people I’ve mentioned this to say that like Peter Kay says Garlic… Bread?).

This is a Slimming World recipe that has been doing the rounds and was rumoured to taste just like sweet and sour. Having made it I can tell you it does taste like sweet and sour, if not better. The whole family wolfed it down and the Husband didn’t realise it was home made (ten points to me).

Ingredients:

  • Sliced peppers (I used frozen and cooked them off just before making this dish)
  • 350g chicken (I used a bag of sliced cooked chicken)
  • Onion
  • Mushrooms
  • Passata
  • Fanta Zero (diet Fanta)
  • Pineapple (fresh)

This is one of those throw together dishes that couldn’t be easier. Everyone has their own way to make this but my version is as below. Serves 4

1.  Put 600mls of Fanta and a good splash of passata into a pan with the mushrooms, onions and peppers and cook on a high heat until it starts to thicken and then turn down to simmer.

2. When using cooked chicken throw this in when the sauce is nearly done.

3. Chop the fresh pineapple and at the last minute add this. Pineapple (most fruits from what I can remember) have a Syn value when cooked so by throwing this in at the end I am merely warming it and not cooking it 🙂

4. Serve.

It really is as simple as that. The result is a thick and tasty sweet and sour sauce that the whole family can eat.

Have a play with the recipe to incorporate your own favourite ingredients or cook off the chicken in advance if not using cooked.

Slimming World Progress #1

I weighed in on Monday after my first week back on the plan and nearly fell over to find that I had lost 6lb. Thrilled wasn’t the word. Clearly red days are most suited to where I am right now and so I’m working on a 5 red day and 2 Green day ration (I like to mix it up a bit!).

Monday is weigh-in again and I’d love a pound off to give me my half stone award in two weeks but we’ll see.

So far – pretty good and I’ve thoroughly enjoyed being back on plan. Here are a selection of meals I’ve enjoyed over the past ten days for anyone looking for a little inspiration.
