Slimming World Progress #1

I weighed in on Monday after my first week back on the plan and nearly fell over to find that I had lost 6lb. Thrilled wasn’t the word. Clearly red days are most suited to where I am right now and so I’m working on a 5 red day and 2 Green day ration (I like to mix it up a bit!).

Monday is weigh-in again and I’d love a pound off to give me my half stone award in two weeks but we’ll see.

So far – pretty good and I’ve thoroughly enjoyed being back on plan. Here are a selection of meals I’ve enjoyed over the past ten days for anyone looking for a little inspiration.

Slimming World Creamy Mustard Beef

For those who don’t already know I am back enjoying Slimming World and reinventing old recipes with gusto.

This was tea tonight and both Roy and I enjoyed it so I thought I would share it. I’ve not added measures or weights as you all cook for different numbers and have different tastes. Take these ingredients and the method and play with it until it suits you.

  • Closed cup Mushrooms
  • 2 medium onions
  • Spring onions
  • Fat free natural yogurt
  • Black pepper
  • Wholegrain mustard (syn this)
  • Lean beef steak (diced or strips)

Using Frylight and a wok gently cook off your mushrooms and onions and at the half way point add the lean steak. continue to “fry” on a medium heat until cooked through.
While cooking make up a sauce with fat free natural yogurt, finely snipped spring onions, black pepper and wholegrain mustard. Alter the amount of mustard suit your needs but remember to syn it.
Switch off the fried beef mixture when done and allow to cool slightly.
*Just* before serving mix through the creamy sauce and enjoy with steamed vegetables or salad.
(If you “cook” the yogurt it will separate and doesn’t look so nice).

*For a free sauce you could exchange the wholegrain mustard for mustard powder.
