Recipe: Slow-cooked Lasagne

Not being a foodie writer – you’ll have forgive my lack of measurements and weights, fancy cookery terms and pictures!
I have been promising for ages to post about slow-cooked lasagne and have never got my bottom in gear but for @helenlindop (whom I have promised this recipe many times – whoops) here it is!

 

Ingredients: (Amounts vary depending on the size of the slow cooker!)

Mince.

Onions

Mushrooms

Tomato sauce (be this jar or your own – just so long as its not too runny).

Lasagne sheets

White Sauce (as with the tom sauce, nice and thick)

Grated cheese (plenty of!).

 

  • Cook off your onions, mushrooms and mince in a pan, draining off any excess liquid.
  • Make up and add your tomato sauce (I use Tesco Chunky Vegetable Pasta sauce which is packed with well chunky veg!).
  • Put a thick layer of the bolognaise mixture in the bottom of the slow cooker.
  • Add a layer of lasagne sheets (no need to blanch these),
  • Add a layer of white sauce,
  • Add a layer of lasagne sheets
  • Then bolognaise mixture,
  • Then lasagne sheets,
  • Then white sauce which you top with generous handfuls of cheese!
  • Lid on, set to medium and away it goes. That is it – I tend to do this around lunchtime ready for a 6pm tea but on low you can do it in the morning.
  • If being frugal, or healthy depending on how you look at it, reduce the amount of mince and add more veg to your mix, aubergine, onion, mushrooms, peppers… whatever you fancy.

The result is a lovely lasagne, fused together and a kitchen that smells absolutely heavenly! I serve mine with crusty bread and green salad and it is a firm favourite in our house.
